Flight Experience
The business class cabin is arranged in a 1-2-1 reverse herringbone layout. You'll have a lie-flat seat and direct aisle access regardless of which seat you choose. Personally, I like the window seats.
I will caution that the quality of the food can be inconsistent. I had a nice meal on one flight while the other was subpar. Similarly, the crew on one of my flights was great while the other seemed a bit less interested. Still, for a flight to Europe, I don't think this will be a huge issue.
If you want to check out Air Canada's Signature Suite - it's a restaurant within the Maple Leaf Lounge, it's a much better dining option than inflight. I was really impressed with the food, drink, and service. You'll need to book a flexible award with Aeroplan points to have access.

Best Ways To Book
Turkish Miles&Smiles: Best Overall Option For One-Ways
At 45,000 miles, Turkish is the best option if you have Bilt, Capital One, or Citi points. It's also the best option if you need a one-way with a connection on United in either direction.
ANA Milage Club: Best Round-Trip Rate
If you're booking a round-trip ticket (with or without a connection), transferring 88,000 Amex points to ANA Mileage Club is a great option. Please note that transfers from Amex to ANA can take 2-3 days.
Air Canada Aeroplan: Best Chase Option
If you have Amex or Chase points, Aeroplan is solid for a one-way non-stop starting at 68,000 points.
If you connect on partners, the rate will be based on the partner award chart which will bump many itineraries to 70,000 points (possibly 90,000 points from the west coast).
You can use GCmap to calculate your total flight distance and double-check Aeroplan's zone-based chart. You can also include a stopover for 5,000 additional miles on a one-way award.
Avianca LifeMiles: Solid Option If You Connect
If you have Amex, Capital One, or Citi points and need to connect, 63,000 LifeMiles can be a better play than Aeroplan. Turkish still has the edge though.
Note: In test searches, LifeMiles was not showing space.
