Flight Experience
LATAM operates Boeing 787s on these routes. While some of their 787-9s have their newer business class product, none of their 787-8s do. I would expect to get the older product.
The older business class cabin will be arranged in a 2-2-2 layout. This layout is open so there isn't any privacy. Each seat will be lie-flat. If you're traveling solo, a middle section seat is ideal since both seats have direct aisle access.
The catering and crew both get solid marks overall.

Best Ways To Book
Alaska: Great Rate, No Surcharges
While Alaska miles are tough to earn, you can book either route for only 45,000 miles one-way and you won't be on the hook for any surcharges. You can also include a free stopover in Santiago on your way to another destination.
Cathay: Great Rate from Miami
With Cathay, you'll need 63,000 miles for a one-way from Miami. This is your best option from Miami if you don't have Alaska miles. You can transfer Amex, Bilt, Capital One, and Citi so the miles are easy to earn.
