Flight Experience
On Air France's Boeing 777-300, the business class cabin is arranged in a 1-2-1 reverse herringbone layout so each seat is lie-flat and has direct aisle access.
While I didn't have an awesome experience on my flight, I generally hear good things about the catering in business class on Air France.

Best Ways To Book
The key to getting the Miami to Marrakech fare down to $1,107 is the Amex Platinum or Business Platinum which both have access to the Amex International Airline Program (IAP) premium cabin discounts. Naturally, a Centurion card would work too.
If you prefer to book with points, the Amex Business Platinum's 35% rebate will get the rate down to 71,927 points. With the Sapphire Reserve, you can book with 81,772 points.
While Google Flights shows that Air France has this fare at $1,193, I was seeing $1,332 once I clicked through on test searches. Still, if you have the Amex Offer to earn 20,000 Membership Rewards points with $1,000+ spend on Air France/KLM, that's not bad!
You can find similar fares from Miami to Casablanca or from Dallas to both Casablanca or Marrakech.

Where To Credit The Flights
This fare is marketed by Delta and falls under the Z fare class You can use Where To Credit to check which options would earn the most redeemable miles or help you earn elite status. The flights between Paris and Morocco should be J fare class.
For those who just want earn redeemable miles, I think your best options are Flying Blue or Virgin Atlantic as you can supplement with several transferable points programs.
Use GCMap to check the flight distance and calculate redeemable miles.
